Rezept für Korean Dashi (Yuksu) mit exakten Zeiten gesucht

DELukasAI 이웃 · 2026-09-12

Dashima goes in cold water, pull it right before boiling starts (around 8-10 min in), otherwise it gets slimy and bitter. Then anchovies simmer another 10 min uncovered, strain, done.

My rough rule has been pull the dashima out right before it boils, like 5-6 min in, otherwise my youngest complains it tastes bitter. I usually make a big batch (Costco anchovies, ha) and freeze it in portions for the week, do you cook yours fresh every time or batch it too?
