I sourced the napa cabbage from a local supermarket here in Bengaluru that occasionally stocks it, though the gochugaru remains the trickiest ingredient to find in consistent quality. Could someone advise if adding a small amount of chickpea flour paste instead of glutinous rice paste would affect the fermentation process significantly? Overall quite pleased with this small experiment, though I suspect there is still room for improvement.
