Die Bitterkeit nach dem Grillen kommt vermutlich vom zu hohen Zuckeranteil aus der Birne bei zu starker Hitze, das karamellisiert sonst zu schnell und wird bitter statt tief. Ich arbeite mit einem Verhältnis von 100g Sojasauce zu 40g Birnenpüree zu 15g dunklem Muscovado-Zucker, dazu ein Löffel Doenjang für die fehlende Umami-Tiefe, das ersetzt bei mir die Fleischbrühe ziemlich gut. Marinierzeit sollte auch mindestens 4 Stunden im Kühlschrank sein, sonst zieht der Geschmack nicht richtig ein.
