Vegetarian version of kimchi-mari guksu?

I recently came across a photo of kimchi-mari guksu, the cold noodle dish served in icy kimchi broth, and it looked perfect for the heat we have been getting here in Bengaluru lately. Since I keep a jeotgal-free kimchi at home, I am wondering if the broth can still taste properly tangy and deep without any fish-based seasoning. Could someone advise on how to balance the broth, perhaps with extra fermentation time or a touch of fruit for sweetness, so it does not end up too flat? I have access to decent gochugaru and radish through a Korean grocery near my IT park, so the main ingredients should not be an issue. Any guidance on proportions for the broth versus kimchi juice would be much appreciated.
