Vegetarian sundubu-jjigae without anchovy stock?

I have been trying to recreate sundubu-jjigae at home, but most recipes I found rely heavily on anchovy or dashi stock for the base flavour. I attempted a version with kelp and dried shiitake broth from a Korean grocery run near my office, but the result felt somewhat flat compared to what I remember tasting once at a restaurant here in Bengaluru. Could someone advise on how to build depth without the seafood component, perhaps using soybean paste or a particular vegetable combination? I do have access to gochugaru and silken tofu locally, so those are not an issue. Any guidance on the ratio of paste to water would be appreciated as well.

Bei mir funktioniert ein Verhältnis von etwa 15g getrocknetem Shiitake und 10g Kombu auf 1L Wasser, mindestens 8 Stunden kalt gezogen, danach kurz aufgekocht. Zusätzlich löse ich 1 EL Doenjang direkt in der heißen Brühe auf, das bringt die fehlende Umami-Tiefe – wichtig ist, es nicht mitzukochen, sondern erst gegen Ende einzurühren, sonst verliert man die Aromen.
