週末に豚バラ肉を厚切りで焼いてみたが、強火で一気に焼くのと中火でじっくり焼くのとで脂の出方が全然違うことに気づいた。強火だと表面はすぐ色づくが中に脂が残りすぎる感じがして、今回は中火で時間をかけたら脂がよく抜けて香ばしさも出た。焼く前に常温に戻す時間を長めに取ったのも良かったと思う。札幌は今週から雪が積もり始めたが、こういう時期はやはり脂の乗った肉が体に合う気がする。次は炭を使って同じ実験をしてみたいと考えている。
