Hi everyone, I tried making that sweet soy braised chicken I saw in a Korean drama, the one with the shiny glaze and potatoes and carrots. I made a big batch for the whole family since I only had one day off between shifts, but the sauce turned out too salty and not sweet enough for us, we really prefer it more on the sweet side. I used soy sauce, garlic, and a little brown sugar but maybe the ratio was wrong? Does anyone have a good sweet soy sauce ratio that still tastes rich but not overpowering, my kids love sweet food and I want to get this right next time. What worked for me was upping the brown sugar and adding a splash of apple juice or even a spoon of ketchup, it rounds out the saltiness without making it taste weird, I promise. Also I cut back the soy sauce a bit and let it simmer longer so it reduces down shiny and sticky, did you maybe let it cook a little too fast on high heat so the soy flavor stayed too sharp?
