Ganjang vieilli et accords vin, une piste ?

En feuilletant un livre sur les sauces fermentées, je suis tombée sur un ganjang vieilli plusieurs années, presque aussi sombre et concentré qu'un jus de viande réduit à l'extrême, avec cette même profondeur presque tannique. Cela m'a immédiatement fait penser à un vieux Comté, où le sel et l'umami dialoguent avec une acidité discrète en arrière-plan. Je me demande si quelqu'un a déjà tenté d'accorder ce type de sauce, utilisée crue par exemple sur un tartare ou un poisson à peine saisi, avec un vin jaune ou un vin oxydatif du Jura ? J'ai peur qu'un vin trop fruité s'écrase complètement face à cette salinité profonde, mais je manque totalement d'expérience directe avec le ganjang le plus âgé.
