Mild tteokbokki sauce keeps turning out watery, help?

So I finally caved and bought a big tub of gochujang at Costco because my kids have been begging for tteokbokki after seeing it on a K-drama (of course), but every time I make it less spicy by cutting the gochujang and adding more sugar/water, the sauce ends up thin and kind of separates instead of getting that glossy sticky texture. I'm using rice cakes from the Korean market here in Chicago, boiled from frozen, if that matters. Do I need to add something like starch water to thicken it up, or is there a better ratio of gochujang to gochugaru to soy sauce that stays thick even when I dial down the heat? Anyone made a genuinely kid-friendly version that still looks like the real deal? My third grader is judging me hard right now lol.
