Made japchae for the whole freezer this week!

So it's been brutal cold here in Chicago, the kind where you just want to be in the kitchen all afternoon, so I went big and made a giant batch of japchae with a Costco pack of sweet potato noodles. Took me forever to figure out the right ratio of soy sauce to sugar so it wouldn't be too salty for the kids, but I think I finally nailed something close to sweet enough! My youngest actually asked for seconds which almost never happens with anything that isn't beige and fried. Question for you all though, does japchae reheat okay from frozen or does it get all clumped and weird? I portioned out like ten containers because I got carried away with the noodles, so I really hope this freezes well!

Congrats on getting the sweet-salty balance right, my kids also love things sweet like that. From what I've noticed the noodles do get a bit softer/clumpy after freezing, so maybe add a little sesame oil and separate them gently with your hands before microwaving, works okay for us. Anyway happy your youngest asked for seconds, that's the best feeling ever!
