H-Mart had bundles of buckwheat noodles on sale last week, grabbed two without a real plan. Austin's been hitting 40°C and I want something cold and spicy for meal prep instead of turning on the stove. Not looking for real naengmyeon with the beef broth, more like a quick version I can throw together in 20 minutes with gochujang and rice vinegar. Anyone have a ratio that works, something like 2 tbsp gochujang to 1 tbsp vinegar as a starting point? Also curious if soaking the noodles in ice water for 5 minutes actually changes texture or if that's just a placebo thing people do.
