- Red tomatoesa few, sliced
- Garlica few cloves
- Red sauce (tomato-based)as needed
- Fresh herbs (thyme)a sprig, for garnish
- Parchment paper1 sheet
Directions
- Slice eggplant, green zucchini, yellow zucchini, and red tomatoes into thin, round pieces.
- Spread a layer of red sauce (tomato-based) in a round baking dish.
- Arrange the sliced vegetables (eggplant, green zucchini, yellow zucchini, red tomatoes) in alternating, overlapping circles on top of the sauce in the baking dish.
- Cover the baking dish with parchment paper.
- Place the covered dish into an oven to cook.
- Remove the cooked ratatouille from the oven.
- Plate a portion of the ratatouille, topping it with additional red sauce and garnishing with fresh herbs.
